Pinakbet is a healthy dish that is known all over the Philippines. Pinakebbet is an Ilocano word which means “to shrivel” or “dry up.” The dish is made with different types of vegetables, meat, shrimps and bagoong.Fatty pork is one of the ingredients that contributes flavor to this dish. Unlike other stews, this viand from the Ilocos Region is a bit dry. The sweet taste of squash, the saltiness of the shrimp paste and the crisp vegetables make this an irresistible dish.
INGREDIENTS
1 ½ CUPS WATER
½ CUP PORK,SLICED INTO STRIPS
½ CUP TOMATOES,CHOPPED
3 CLOVES GARLIC,MINCED
1 TBSP.GINGER,MINCED
1 TBS.BAGOONG (ALAMANG)
1 CUP KALABASA, SLICED
2 PCS.SMALL ROUND AMPALAYA,QUARTERED
4 PCS. SMALL ROUND EGGPLANTS,QUARTERED
COOKING INSTRUCTIONS
IN A PAN SAUTE, ONION GARLIC,GINGER,ALAMANG AND PORK.SAUTE UNTIL PORK TURNS INTO GOLDEN BROWN.
ADD IN KALABASA , SIMMER FOR 5 MINUTES.
THEN ADD IN AMPALAYA SIMMER FOR ANOTHER 5 MINUTES.
ADD IN TOMATOES ,SALT AND PEPPER TO TASTE.SIMMER UNTIL ALL THE INGREDIENTS IS FULLY COOKED.
PLATED AND SERVE WITH RICE
