Chicken binakol or binakol na manok is another chicken soup popular in Visayas Region specially in Iloilo. This is similar to tinolang manok, instead of regular water we used coconut water and coconut meat. This simple Filipino dish is traditionally cooked inside the bamboo and they used native chicken to give more aroma and taste.

INGREDIENTS

½ KG CHICKEN,CUT INTO SERVING PIECES

2 CLOVES,GARLIC

1 TBSP GINGER, SLICED

1 ½ CUP COCONUT JUICE

1/3 CUP GREEN PEAS

1 PC ONION,QUARTERED

1 PC TOMATO,QUARTERED

2 PCS POTATO,DICED

1 CUP COCCONUT MEAT,SLICED

 

COOKING INSTRUCTIONS

IN A PAN ADD IN BUKO JUICE,ONION,GARLIC, AND GINGER.

 

 

 

 

ADD IN OUR POTATOES

 

 

 

ADD CHICKEN.

 

 

 

COCONUT MEAT

 

 

WAIT FOR IT TO SIMMER AND ADD IN SALT AND PEPPER TO TASTE.

 

 

OVER MEDIUM HEAT FOR ABOUT 30-40 MINUTES LET IT SIMMER OR UNTIL OUR POTATOES AND CHICKEN ARE COOKED. THIS WILL INFUSE THE NATURAL TASTE OF COCONUT AND CHICKEN.SERVE AND ENJOY.
