This Arroz Valenciana recipe is much like Paella. This Filipino Recipe employs coconut milk, malagkit (glutinous or special almond), boiled eggs, and chorizo.
Ingredients
3 Tbsp soy sauce 1 Tbsp oil, for sautéing
2 tsp garlic, pounded
1/2 cup onion, red, chopped
500 g chicken, thigh, cut into 3
2 Tbsp liver spread
2 pc chicken bouillon cube
1 liter water
2 cup rice, malagkit
1 Tomato Sauce (250g) 1/2 cup green peas, frozen
1/2 cup bell pepper, red, cut diagonally into squares
Preparation
1. In a pot, sauté garlic until fragrant. Add red onion and continue sauteing until translucent.
2. Add chicken and sauté until brown. Add liver spread.
3. Add in chicken bouillon cubes, water, rice, Tomato Sauce and soy sauce. Cover and let boil then turn
down to simmer, stirring occasionally. Let cook over low fire.
4. Add the green peas and bell pepper when nearly done. Serve hot. Cover and steam.
