INGREDIENTS:

1 kg. Fresh Squid (large)

 Marinade:

1 bottle  7-up or any lemon carbonated softdrinks

3  Garlic (minced)

2 tbsp. Oil

1/4 cup Soy sauce

2 tsp. Black Pepper

Stuffing:

3 pcs. medium Onion(chopped)

4 pcs.Tomatoes (chopped)

2 stalks Spring Onions

2 stalks cilantro leaves for garnish

Slices of lemon for garnish

Salt and Pepper to taste

PROCEDURE :

  1. Clean the squid,remove the squid head, cutting and disposing parts from the eye socket down (leaving just the tentacles).
  2. 2..Remove the clear, plastic-like cartilage and wash the body tube thoroughly im running water.
  3. Marinate the squid and the tentacles with the mixture of soda, soy sauce, garlic, vegetable oil and black pepper for 1-2 hrs.
  4. 4.Mix the vegetable stuffing together, and season with salt and pepper.
  5.  5.Stuff the squid and put the head back and seal it with bamboo stick or toothpicks.
  6.  6.Grill the squid 3-5 minutes each side. Do not overcook
  7. Remove the stick and serve with a dipping sauce of calamansi or lemon juice, soy sauce and chili.
